I spent hours researching reviews online and concluded that the Wustoff Classic series was virtually without faults and still within reach for a reasonable budget, but I was starting to turn pale at the thought of spending $700-$800+ on a complete knife block set for my home use. To me, this hybrid set is the best solution! The most important knives--the larger ones, which are very expensive separately---are from the Classic series, while the table steak knives are from the still excellent but more affordable Gourmet series. Even at the $380 price I paid (-20%, in spite of BB&B specifically naming Wustoff as exempt from their 20% coupons, they still honor them in the store!), I had a few doubts if I really needed to spend that much--that is until this first time I sliced an onion using the 8-inch Chef's Knife. I used to assume the pro chefs you see on TV make it look so easy to get thin onion slices partially from their highly developed skills, but I realized it has more to do with having top tier knives! I found myself making trays of sliced foods that could appear in a magazine in no time without effort. The Chef's Knife is a true ROCK STAR and immediately erased any doubts I had before, the craftsmanship is on the level of a nice sword. You have to realize and account for the fact that knives of this level of sharpness can be very dangerous, they really are steps above normal. I later bought a separate Classic 7-inch santoku to round out the collection and feel that I have all the major bases covered for my needs. It is likewise nothing short of an inspiration to use! I find myself making more things from scratch now just to use these fantastic knives...The Gourmet table steak knives are excellent as well and I seriously doubt a more expensive steak knife such as the Classic series is needed for most unless you have money burning a hole in your pocket. I would easily believe they are from the Classic series if I didn't know. Like the Classic series, these are also handwash knives, so I still have my old knife block with some cheaper, machine washable knives for very quick/casual meals when I want to be lazy and use the dishwasher. I always use the Wustoff knives for any special occasion or any time steak or lamb, etc, is served.
A fair warning though, you'll never look at "grocery store" knives in the same way again. I literally threw away most of my generic knives---the Chef's Knife I had before now felt like a dull toy---and I even decided to replace all of my forks, spoons and butter knives. The Wustoff set opened my eyes to another level of quality and you once you've experienced it, you can't go back....
